When I was a child, my mother would place her orders from Swiss Colony for the holiday season and my main request would be butter cookies.
You can always get these cookies year round in those famous blue tins, yet I enjoyed them so much more during the holidays.
While growing up in Miami, we were lucky if we got a cold front. So these butter cookies would take my imagination far away to Denmark or Holland and I would picture a beautiful winter holiday, where it would be snowing outside and a fire going inside.
The key to these cookies definitely rely upon the butter, Lurpak butter. Giving these cookies that distinctive flavor, along with pure vanilla, coconut or almond extract and icing sugar rather then granulated sugar. The icing sugar creates a very smooth cookie.
