After making my Halloween sugar cookies, I still had some dough left over so I made balls out of them and pushed down the center and filled it with Raspberry jam. My friend loves raspberry jam for some reason, so I thought it would be nice to make these cookies for him. I think if he had to choose between his favorite chocolate chip cookies I make and these raspberry sugar cookies, he would pick the sugar cookies. So here is the recipe for the sugar cookies I made in the Halloween Sugar Cookies post.
2 cups sifted all-purpose flour, plus more for work surface
1/4 tsp of salt
1/2 tsp baking powder
1/2 cup unsalted butter (1 stick)
1 cup sugar
1 large egg
1 tsp vanilla extract
Any Favorite Jam
1. In a large bowl, sift flour, salt, and baking powder together and set aside.
2. Cream butter and sugar together on medium speed until light and fluffy, about 3 minutes. Add egg, mix well. Reduce speed and add flour mixture until well combined. Stir in vanilla. Wrap dough in plastic and refrigerate until cold, about 45 minutes.
3. Preheat oven to 325 degrees. Make 1 inch balls from the dough, place them 1 or 2 inches apart and press down the middle, after you’ve filled up your baking sheet, spoon in your favorite jam in the middle of the dough. Make a deep enough impression so the jam wont run over.
4. Bake cookies for about 10 to 12 minutes or golden brown. You can leave them plain or dust with powdered sugar. Let cool and enjoy!
